“Skinny” Chicken Fajita Soup

So I wanted to try this recipe before posting it, but after I confirmed it’s deliciousness I had to share! See link below for the recipe:


A few adjustments I made:

-I used my slow-cooker instead. Five hours on high and the chicken shredded so easily!

– Added a pinch of Adobo and some pepper for some more flavor

– I subbed roasted corn (frozen) for beans- I have a picky eater on my hands and it’s not my child 😂

– Some shredded cheese and a dollop of plain Greek yogurt (instead of sour cream) to top it off!
