Thankful and Stuffed

And just like that, the delicious Thanksgiving feast(s) is over with, and a new week has begun!

The holidays are a time to reflect on all I am thankful for over the last year and always- my growing family, our new home, etc. but also a time to reflect on what I can do to better myself as we approach a new year. I may not be perfect everyday, but “today” has become the new “tomorrow.” There’s no better time than the present to take the best care of ourselves, and no one else can make that choice for us! So let’s finish 2017 strong, so we can start 2018 even stronger!

As some of you may know, I am all about convenience. Working full time and taking care of a little one has increased that over the last year. I pulled a couple recipes this week that were easy to make, easy to grab, and quite delicious! Most mornings I am running out the door, shoving my breakfast down, and grabbing my coffee for the ride. I decided to look up some “on-the-go” breakfast recipes to make my life easier (and maybe get a few more minutes of shut-eye), and found these awesome egg muffins! I can take these with my coffee on the road, and they’re great for kids (and husbands!) when you don’t have time to make breakfast-

The second recipe was a good old-fashioned turkey meatloaf (beef welcomed if you’re turkeyed out), and it was delicious. Served with some mashed sweet potatoes and roasted veggies and you have yourself an easy-peasy, low maintenance meal with leftovers!
